This seedless tamarind pasta (or Thai pasta or ham paste) is used in many Thai recipes. Tamarind paste is the pulp of the ripe tamarind tree, a native of India. The capsules ripen from green to brown and inside are smooth, hard brown seeds surrounded by sweet tarts, dark brown sticky paste. The pulp is separated from the seeds and fibers and is then compressed into blocks (ma-kahm bpiak), to preserve it.
